Dangerously Easy Chocolate Puddings

Occasionally, I will get a real craving for dessert. 

Something sweet and gooey and rich and satisfying and ready in under 20 minutes!

We love these little chocolate puddings because they are sweet and decadent and most certainly fall in the category of treats – but they are also nourishing and sustaining and will satisfy that sweet craving well and truly.

I love them all the more because it is a recipe my husband put together and he makes it for me when he knows I need a pick-me-up.  It’s very romantic!  They are incredibly simple, quick to prepare and the ingredients are usually already in the pantry, just waiting to be used.

Dangerously Easy Chocolate Puddings

Easy chocolate puddings

Serves 2


2T honey
2T organic butter (or coconut oil), melted
2T dutch cocoa powder
1 organic, free range egg
1/4 cup almond meal
tip of the teaspoon of baking powder
pinch of sea salt

What to do:

Preheat the oven to 170C

Mix the melted butter, honey and cocoa together in a bowl.  Add the egg and give it a good whisk with a fork.

Add the almond meal and stir well, then add the baking powder and salt and mix well again.

Divide mixture between two ramekins and bake in the oven for about 12-15 minutes.  It’s okay if it’s slightly under done (it’s better this way!).

Top with a scoop of homemade vanilla ice-cream, real double cream or even natural yoghurt and some strawberries or raspberries.

Make appropriate ooh and ahh sounds as you devour every last bit!
