Easy Dinners – Baked Eggs + Avocado Toasts

This is the dinner you make when you don’t feel like making dinner!  It’s a great Sunday night option and you can usually rustle up enough ingredients from the garden or pantry to make it simply delicious.

Baked Eggs + Avocado Toasts

Serves 4

What you need:

Home made (or even tinned if you are desperate) baked beans… Leftovers are great!

Eggs – one or two per person

Chopped parsley

Parmesan cheese, finely grated or fetta or goat cheese (optional)

Crunchy sour dough bread or gluten free bread, toasted

Avocado

Lemon juice

Sea salt and freshly ground pepper

What to do:

Pre-heat oven to 180 C

Spoon your beans into ramekins.

Break an egg gently over the top.

Sprinkle with parmesan, if using.

Bake in oven for 15-20 minutes, or until eggs are done to your liking (the white, white and the yolk runny is best).  Sprinkle over the parsley just before serving.

Meanwhile, toast up your sour dough, spread it generously with avocado, drizzle with lemon juice and season with salt and pepper.

* Be careful…those ramekins are bloody hot when they come out of the oven!

Enjoy in time to sit down and watch Masterchef!
