My Easy Granola Cookies make a nourishing snack and are perfect for the lunch box.
It’s Sunday afternoon and you realise the pantry is empty and you have school lunch boxes to prepare. Made from simple, staple ingredients like butter, coconut and oats my granola cookies can be whipped up in no time. Wholesome enough to sustain hungry tummies and naturally sweetened with honey and coconut sugar they are simply delicious and can be made even more indulgent with a drizzle of melted dark chocolate if you happen to be in the mood.
Easy Granola Cookies
Makes 10-12 Easy Granola Cookies
2 cups of rolled oats
1/3 cup of chopped almonds, walnuts or pecans or/ shredded coconut if you prefer your cookies nut free
1/3 cup of pepitas
1/3 cup cranberries or raisins
1/2 cup spelt flour
1/4 cup coconut sugar or rapadura sugar
1/4 cup honey
1/2 cup butter, melted
1 egg, lightly beaten
zest of an orange
What to do:
Pre heat the oven to 170C and line a large baking tray with baking paper.
Place the oats, nuts or coconut, pepitas, cranberries or raisins, spelt flour, coconut or rapadura sugar and orange zest in a bowl.
Place the butter, honey and lightly beaten egg in a small jug and whisk to combine.
Add the wet ingredients to the dry and mix well.
Drop 1-2 tablespoons of mixture into little piles on your baking tray and bake for 15-20 minutes or until golden.
Allow to cool and if so desired, you might like to drizzle your cookies indulgently with a little melted dark chocolate.
