Naturally sweet, chewy and delicious, my easy no bake energy balls are the perfect, simple snack to have in the fridge for those moments when you need a pick me up. Gluten, dairy and refined sugar free, they are a treat everyone can enjoy.
I’m not sure about you, but during the school holidays, I feel like I am permanently attached to the kitchen bench and engaged in never ending food preparation! Children are always so hungry! Now that my kids are a little bit older, I love to get them involved in cooking and these easy no bake energy balls are the perfect kitchen project.
Made from all natural and nourishing ingredients, these balls are a bite sized snack that packs a punch!
How to make Easy No Bake Energy Balls
My beautiful enamelware plate is from My Beach Kitchen.
This recipe makes 12 large or around 30 bite sized balls.
I prefer to use activated nuts and seeds but you don’t have to.
2 cups of nuts of your choice – I have used almonds, walnuts and pecans here.
2 cups of medjool dates, pitted
1 cup of seeds – I have used sunflower, sesame and pepita
1/3 cup of goji berries (soaked for 15 minutes in a some warm water if you have time)
1 Tablespoon of coconut oil
Zest of 1 orange
Juice of half an orange
1 Tablespoon of honey
1 Tablespoon of raw cacao
What to do:
Add the nuts to your food processor and process until you get a fine crumb.
Add the dates and process again until well blended.
Add all other ingredients and continue to pulse until the mixture comes together, but still has a chunky texture.
Roll into balls of the size you desire and if you feel like it, roll them in some sesame seeds, chopped pepitas or shredded coconut to decorate.
Store in the fridge or freezer.
