In Abundance: Summer Berries and my Favourite Breakfast, the Acai Bowl

I love all sorts of fruit but if I had to name one as my favourite, it would have to berries.  And if I had to choose a favourite berry, well, that would be tough…it’s probably raspberries.  But then, I love blueberries too…and blackberries, wow, the blackberries this year have been amazing.

Berries are pocket rockets when it comes to goodness.  They are little powerhouses of nutrients, especially anti-oxidants which, among other important jobs, help us stay looking young and beautiful!

I’m not a big eater in the mornings, it’s just the way my body is.  I envy people (like my husband) who have no problem polishing off eggs, bacon, avocado, tomato, mushroom, toast and more but for me, I like to keep it light and what I’m about to share with you is the best breakfast ever!

The summer berry acai bowl

This is a wonderful way to use all of those delicious summer berries we have in abundance right now (if you live in the Southern Hemisphere) especially the ones stock piled in the freezer.   Adding acai (a-sigh-ee) a superfood berry rich in fibre, good fats, vitamins and minerals which can be bought in powder forms from your local health food shop to our blend, we boost the nutrient density of our brekky through the roof.  Exactly what a busy mum needs!

Bowl

Serves 2 – 3

To your blender or thermomix add:

  • 2 frozen bananas
  • a big handful of frozen or fresh berries
  • a handful of baby spinach
  • 1 tsp raw honey
  • 1 T acai powder
  • 1 cup of chilled coconut water
  • ice

Whizz all of this together until you have a luscious, thick smoothie resembling gelato.  Pour your smoothie into a bowl and top with anything you like but here are some options that I highly recommend:

  • activated buckinis
  • goji berries
  • granola
  • shredded coconut
  • yoghurt
  • more fresh berries
  • chopped almonds, walnuts or pecans
  • chopped dried fruit such as figs or apricots

* any leftover acai smoothie can be poured into icy-pole moulds for a healthy snack or dessert.

    1. To make the smoothie? I mix it all on speed 8 for 1 minute.
