Thursdays are crazy in the Cossie household!
Thursday night is ballet lessons night which means several trips to and from the community hall in town to drop off and pick up my daughters as well as attending to the myriad other jobs a mum has to do on a week night.
If I have learnt one thing over the years in how to deal with these busy afternoons when it’s cold and raining, kids are tired and you have almost run out of energy it’s this: Keep it simple!
Thursday dinners are very simple affairs in our family. They need to be quick, nourishing and something everyone likes because let’s face it…by Thursday we no longer have the energy left to persuade, bribe or argue our kids through a plate of something they’re not keen on.
However…keeping it simple doesn’t mean we have to sacrifice wholesomeness or deliciousness. Try our easy Italian potato omelette for example.
Easy Italian Potato Omelette.
6 large free range/organic eggs
2 large, peeled and sliced potatoes
1 big handful of herbs – we like parsley but rosemary, oregano and thyme work well too.
1/4 cup parmesan cheese (optional)
Sea salt and freshly ground pepper
Optional add ins: Lightly dressed fresh rocket or spinach to garnish, leftover cooked and chopped Italian sausage, any veggies like grated zucchini, onion, garlic, leek, silver beet.

What to do:
Heat the ghee or olive oil in a medium to large frying pan and cook the potatoes on both sides until cooked through, seasoning as you go. Set aside.
In a bowl, mix the eggs, herbs and cheese (and any optional extras you may be using) and whisk to combine.
Add a little more ghee or oil to your pan and lay the potato on the bottom, then pour the egg mixture over the top.
Cook until golden brown on the bottom (lift up the edge with a spatula to check) and if you’re game, flip it to cook the other side. In the spirit of keeping it simple, I just finish it off under the grill.
When cooked, slide the omelette on to a wooden board, season with salt and pepper and garnish with the greens (obviously, this will be flicked off by the kids so keep it mostly to your side!).
