Gluten Free Muffins – Plum, Vanilla + Almond

These gluten free muffins are beautifully moist with a delicate flavour. The tartness of rich, red blood plums paired with the sweetness of vanilla is divine. A match made in heaven and so named accordingly…Plum + Vanilla Love Muffins.

I get very excited towards the end of summer when blood plums are in abundance. Their vibrant, deep red flesh make any dish they feature in look beautiful and romantic. Try them roasted and served with honeyed labne or paired with blackberries in a crunchy almond crumble served with thick, real cream.

How to make Plum, Vanilla + Almond Gluten Free Muffins

Makes 6 medium sized muffins

75g of brown rice flour

75g of almond meal

1 teaspoon of baking powder

1 teaspoon vanilla bean powder, or vanilla paste

2 eggs, lightly beaten

2 tablespoons of coconut oil, melted

2 tablespoons of maple syrup

4 blood plums

1/4 cup of natural yoghurt (for dairy free muffins, use coconut cream)

1/4 cup almond milk

What to do

Preheat the oven to 175C and place paper cases in your muffin tin, or grease it very well.

Add the rice flour, almond meal, baking powder and vanilla powder (if using paste add it with the wet ingredients) and use a whisk to combine and remove any lumps.

In a small bowl, add the eggs, coconut oil, maple syrup, yoghurt and almond milk and whisk to combine.

Dice 2 of the plums into 1cm pieces and discard the stone.

Slice the cheeks off the other 2 plums and slice – this will be used to decorate the tops of your muffins.

Combine the wet and dry ingredients and stir well. Gently fold in the diced plums.

Spoon the mixture into your muffin cases and bake for around 25 minutes, or until the muffins are golden and cooked through.

These muffins are delightful served warm with a little yoghurt for dessert or at room temperature for a snack.  They are best eaten on the day they are made but will last for a few days if stored in the fridge in an air tight container.

    1. Perhaps try the grain free banana muffins which are dairy free 🙂
