My winter kale salad is the perfect blend of crunchy, crispy, chewy, tart and sweet freshness. Packed with vitamins and minerals to keep you healthy and full of energy in the cooler months, my winter kale salad is one simply delicious bowl of yummy goodness.
Kale. It is the one vegetable my body noticeably misses when I don’t eat it for a few days. I LOVE the stuff! I like it in juices and smoothies and cooked slowly in stews and soups, but mostly I like it in my winter kale salad with crisp apples from my tree and crunchy toasted almonds (from the supermarket :-/ ).
How to make Winter Kale Salad
This is enough for one person for lunch so multiply the recipe to suit your catering needs.
2 big handfuls of fresh, curly kale
1 fresh, crisp apple, cut into match sticks
1 handful of almonds, lightly toasted in the oven (150C for 8 minutes) and chopped
1 small handful of juicy sultanas, soaked briefly in some warm water then drained.
1 tablespoon of olive oil
1 tablespoon of apple cider vinegar
A pinch of sea salt flakes
Place all dressage ingredients in a small jar, secure the lid and shake well to combine.
How to assemble:
Put your kale in a medium sized bowl and add the dressing. Massage kale with clean hands until the dressing is well mixed through and the kale begins to wilt slightly.
Top with your apple match sticks, crunch toasted almonds and sweet sultanas.

To make your salad more of a meal, you could add:
- Some protein like grilled and sliced pork loin or some roasted chicken
- A whole grain like pre cooked quinoa, brown rice or farro
- A legume like pre cooked puy lentils
- Some fried halloumi and a drizzle of honey
